  • 2 large sweet potatoes

  • 1 cup of broccoli florets

  • 1/2 cup of shredded cheddar cheese

  • 1/4 cup of cream cheese

  • 1/4 cup of milk

  • 2 tablespoons of butter

  • 1 teaspoon of dried thyme

  • 1/4 teaspoon of ground garlic- Salt and pepper to taste

  • A few chopped parsley leaves for garnish

Directions

  • Prepare the Sweet Potatoes : Preheat the oven to 200°C (390°F). Wash the sweet potatoes well and poke them several times with a fork. Place the sweet potatoes in the oven and bake for 45-60 minutes until soft.
  • Prepare the Filling : While the sweet potatoes are baking, heat a pan over medium heat. Add the butter and let it melt, then add the broccoli florets and sauté for 3-4 minutes until slightly tender.
  • Make the Cheese Sauce : In a small saucepan, combine the cheddar cheese, cream cheese, milk, thyme, and ground garlic. Place the saucepan over low heat and stir constantly until the cheeses melt and the sauce is smooth. Add the broccoli to the sauce and stir well.
  • Stuff the Sweet Potatoes : Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut off the top of each sweet potato, and gently scoop out some of the flesh to create a space for the filling.
